Northern Utah Winter Activities

It’s so crazy that it’s raining in January in Utah. I have to admit it’s been kind of nice not having to drive in the snow, but I feel really bad for the ski resorts and for my kids who love the snow. A friend of mine posted on Instagram yesterday that she had drove all the way up to the ski resort and wasn’t able to ski because of the rain. I know a lot of people back east book their spring break here so they can hit the slopes and enjoy what was once “the greatest snow on earth.” I’ve put together a list of fun things to do in Northern Utah if skiing or snowboarding isn’t an option.

Ice Skating

Hallmark movies make ice skating look so easy and glamorous but if it’s your first time on the ice it’ll take a little time to get used to. Be patient and have fun.

Ogden Ice Sheet – 4390 Harrison Blvd., Ogden. This is an indoor rink which is nice when it’s cold outside, plus it’s open year round.  They have open skating in the afternoon and evenings.

Station Park – 140 N Union Ave., Farmington. This rink is magical and is located in the center of Station Park. Lights are strung throughout and music plays in the background.

Gallivan Center – 50 East 200 South, Salt Lake City. This is an outdoor rink that also has a magical feel to it.



Wasatch Parc – This is a fun tubing hill next to Nordic Valley in Ogden Valley. The lift pulls you up and then you tube on down.

Soldier Hollow – Located in Midway this tubing hill is fun for everyone. A magic carpet pulls you up the mountain and when you get to the top you tube on down.


Ice Castles

Midway Ice Castles – The ice castles are located in Midway and are a must see. Bring your camera and capture the magic of this creation.



Many hiking trails are right out our backyard and with no snow on the mountains now might be a good time to take a winter hike. Some of my favorite spots include Antelope Island, Waterfall Canyon and Adams Canyon.

Whatever activity you choose, be sure to bundle up. We may not have snow out there but it’s still pretty cold. I’ve included some Amazon affiliate links of my favorite outdoor gear.

Chinese Chicken Salad


I’m not much of a cook, but there are a few things I make that friends and family request I bring to get togethers, including this salad recipe. It’s one of the best and I have been making it for years.

Chinese Chicken Salad


1 head of green cabbage

1 head of purple cabbage

1 can of cashews

Worcester sauce

3-4 chicken breasts

Wonton strips

Litehouse sesame ginger salad dressing

Sesame seeds

Step 1:

Marinate chicken in worcester sauce for about an hour. Bake in oven at 375 degrees for about an hour. Remove from over and shred into larger pieces ones cooled.

Step 2:

Chop up cabbage and put into bowl.

Step 3:

Pour cashews into small sauce pan. Cover with worcester sauce and simmer on low for about 20 minutes. Let cool.

Step 4:

Add chicken and cashews to cabbage. Sprinkle with sesame seeds.

Step 5:

I do not add the salad dressing or wontons to the salad directly. It gets soggy too fast. I add both to the individual servings. That way if there are leftovers it doesn’t get soggy.

Kitchen Inspiration

I’ve been dreaming about my new kitchen and been spending way too much time on Pinterest.

If we get the home we want, the one built in the 80’s, we will completely remodel the kitchen. The kitchen nook is a little awkward so I’ve been looking at different ideas to make it flow.

This option from is my absolute favorite. It fits my style perfectly. Isn’t it just gorgeous? Just not sure how well it would hold up with a house full of boys!

This is my darling niece. She just turned 18 last week. So crazy she will be graduating this year. We have been documenting her senior year with photo shoots of each season. We haven’t done winter yet because it has been so darn cold around here, but we have fun plans for the winter session. Isn’t she beautiful?
